“Fidalgo da Baixa” is the newest bakery in downtown Coimbra. Located on Rua Simões de Castro, this space is another project created by the young entrepreneur Luís Martins, owner of the Notes Bar & Kitchen restaurant and partner at MA, probably one of the best Japanese restaurants in the country. Similar to what happens in these recognized projects, Luís once again invests in the superior quality of the product he offers to the City and to everyone who visits it.
At Fidalgo, “the bread tastes like bread” and the secret is in the top quality flours that are used in the preparation and, of course, in the long fermentation. Mário Rolando, the “Master of Bread”, with a solid and unquestionable experience in the world of baking, has been responsible for training the Fidalgo team. Every day they offer several types of bread, including “Pão da Padeira” (wheat), “Pão Escaldado” (Rye and Wheat), “Vianinhas” and “Pão de Sementes” (Seed Bread).
